MILD FRUITINESS UP FRONT, WHILE HEAVY COCOA LINGERS ON THE FINISH

Huehuetenango is a coffee-producing region in western Guatemala's highlands. Due to its topography, there are a variety of microclimates here that are ideal for coffee cultivation.  Named after the popular "cenotes" in the area (a cenote is essentially a sinkhole formed by the collapse of limestone that exposes groundwater), the Cenotes of Candelaria are considered a must-visit for tourists. A system of underground rivers connects two pools of crystal clear water that change colors from turquoise blue to bright green.

This is our third year roasting Guatemala Candelaria, and we're impressed with this year's crop. This coffee is from several small farms that are processed together at the local wet mill. It's fully washed, before being sun-dried on patios and features all the classic flavors you'd want from a washed Guatemalan. It's sweet, with mild fruitiness up front, while heavy cocoa lingers on the finish.

We're roasting this coffee right on the lighter edge of a medium roast. This profile highlights this coffee's sweetness and thicker body and lends itself well to brewing as espresso. We think it would also make a great AeroPress, or cold brew. If you like our Costa Rica La Gladiola, this reminds us of a sweeter, punchier version!

This is a limited release coffee, which means the number of times we roast this coffee each week is also limited. Orders may be delayed 1-2 days to ensure freshness, and your coffee will be roasted within 24 hours of when your order was placed (or on Monday, if you place your order after we begin production on Friday).
