This honey-processed micro-lot boasts an intensity of sweetness unlike any we've featured recently!

Marco Tulio Sabillon and his brother have been growing coffee since 2006. Encouraged by neighboring farmers, Marco made the decision to transition to specialty coffee a few years later. His commitment to quality paid off when he brought his first lot of specialty-grade coffee to market in 2018.

This coffee is of the Parainema varietal, which is local to Honduras, and this particular micro-lot consists of very large, beautiful beans similar in size to Pacamara.

The coffee stands out with its intense sweetness, surpassing other honey-processed coffees we've showcased in the past year. Its flavor profile sits between the Colombia Santa Barbara natural and the Honduras 18 Rabbit honey, with a sweetness closer to the Santa Barbara.

Perfect for a pour-over, this coffee's unique characteristics also hint at its potential to create an exceptional shot of espresso.


Roast Schedule

This is a limited release coffee, which means the number of times we roast this coffee each week is also limited. Orders may be delayed 1-2 days to ensure freshness, and your coffee will be roasted within 24 hours of when your order was placed (or on Monday, if you place your order after we begin production on Friday).
