This coffee comes from the lush highlands of La Concordia, in Chiapas, Mexico. It is a family-run farm called Finca Nuevo México, at 1300+ meters, that is new to coffee but rich in agricultural heritage. Though the farm dates back to 1978, current owner Ricardo Ibarra Baumann is part of its first coffee-producing generation, managing everything from cherry picking to export.
This lot features the Sarchimor varietal, an uncommon solo act in our lineup, known for its pleasant acidity, caramel sweetness, and gentle botanical notes. A meticulous three-stage harvest ensures only the ripest cherries make it through, resulting in a cup that’s clean, composed, and quietly distinctive.
Whether you pull it as a shot, brew it slow, or flash-chill it over ice, this coffee’s versatility and balance make it a satisfying pick for any method.
