Peru Cerro Blanco stays gentle and sweet from the first sip. Crisp Granny Smith apple up front, golden raisin through the middle, and a soft biscuit finish that rounds it all off. It's the kind of cup that's easy to drink a lot of, which is exactly what kept happening when we cupped the sample.
It comes from smallholder farmers working at high elevation in the Peruvian Andes, across the Moyobamba and Cajamarca growing areas. The elevation there slows the cherries as they ripen and builds the sugar you taste in the cup. Cherries are hand-picked, pulped, fermented, and washed in clean mountain water before drying in the sun. The coffee is Fair Trade and Organic certified, and the producer groups here work closely together, trading tips to push quality and yield up year after year.
If you lean toward sweet, approachable light roasts with a little fruit and no sharp edges, this is an easy one to reach for. It opens up best as a pourover or filter brew, where the sweetness has room to stretch out.
