The anaerobic process is doing the heavy lifting with this coffee. The cherries ferment in a sealed container for 40 hours, then take a long sun-dry, and that's where the punchy, fruit-forward cup comes from. Wild blueberry and tropical fruit sit over a creamy Dole Whip sweetness, with milk chocolate underneath. There's a little florality running through it too, the kind that shows up a little differently every cup.
This lot comes from Kasese in western Uganda, grown between 1,300 and 2,030 meters. It began as a collaboration between local farmers and their importer with one goal, build a coffee good enough to earn the growers a better price. That meant a new washing station and training hundreds of workers on the theory and practice of anaerobic processing. This lot is the result; an elevated Ugandan coffee made with purpose.
If you lean toward fruit-forward, expressive coffees, this one rewards a little attention. Brew it as a pourover and play with your recipe, the fruit shifts every time, which is half the fun.
