Honduras La Valentina is a natural sun dried coffee that drinks rich and full-bodied, with dark chocolate up front and a sweetness that lands close to cherry vanilla ice cream. What surprised us was the balance. Naturals can get loud, but this one stays composed, every note playing in the same key.
It's a microlot from Finca Benedición de Dios, the farm of Denis Orlando Castillo Flores in the Montecillos region of La Paz. Flores began working with coffee as a kid, helping neighboring farmers at harvest, then slowly bought up small parcels of land until he could farm full time. He's grown the operation into something that's lifted both his family and his wider community. He's also serious about agroforestry, keeping plenty of natural shade over the coffee to hold a steady microclimate and buffer against a changing climate.
If you go for naturals with real fruit and a full, rounded body, this is an easy yes. It's just as good as a slow pourover as it is pulled into a rich shot of espresso.
