Most Central Americans we roast lean into chocolate and caramel. This Honduras goes the other way, bright and fruit-forward, with apple and orange acidity and a honey and brown sugar sweetness underneath. We pulled the roast short to keep that brightness in the cup.
This lot comes from a cooperative of 360 women coffee producers in Marcala, a high-elevation region in southwestern Honduras. Certified organic, with every step from caring for the trees on their farms to the cherry that arrives at the wet mill handled by the women who grow it.
Best on a pour over or Chemex, where the apple, orange, and honey notes have room to come through clean.
