La Pastora is back for another year! Expect a sweet and creamy cup with soft floral aromatics and notes of strawberry shortcake in this ultra-limited lot of high-elevation grown coffee from Costa Rica. Its gentle mouthfeel and layered sweetness make it a joy to drink across brew methods, especially as espresso or pour-over.
La Pastora comes from Don Miner’s family-run farm in Tarrazú, where everyone pitches in during harvest and processing. Our team has visited this farm on multiple occasions and learned directly from Don Minor about his philosophies on processing. This particular lot uses the African washed method, a double soak process inspired by Kenyan techniques. After fermentation and the first wash, the beans are soaked again for 24 hours before drying. That extra step brings out clarity, sweetness, and balance in the cup.
