This is a classic washed Guatemalan, and it drinks like one in the best way. It has notes of hazelnut up front, with a Milano cookie milk-chocolate sweetness through the middle, and a hint of caramel apple that keeps it lively. We roasted it to a medium level, so the sweetness and body come forward without flattening the fruit.
The coffee comes from a group of 33 smallholder farms working together in San Marcos, a region in Guatemala's western highlands. Pooling their cherry lets these small producers reach a level of quality and consistency that a single farm this size could not on its own. The lot is certified organic, grown between 1,250 and 1,500 meters and contains varieties of Bourbon, Caturra, and Catimor.
Brew it on drip or as a pour over for a sweet, chocolate-forward cup with a little more complexity than you expect. A good, everyday medium roast that still gives you something special with each sip.
